A review on the quantitative analyses of fats and oils using fourier transform infrared spectroscopy

Conventionally the analytical techniques used to analyse the quality parameters of oils and fats are by wet chemical methods that involve titration. Normally these chemical techniques require large amount of chemicals and reagents which may be unfriendly to the environment and hazardous to health. To overcome the problem, Fourier transform infrared spectroscopy is considered the instrumental approach of choice.
